Thought to originate at the Southside Club on Long Island, New York back in the 1890’s, this is a bright, minty refreshing cocktail…a gin mojito…

Ingredients

  • 6 mint leaves

  • 50ml (4 tbsps) gin

  • 1 tablespoon lemon juice

  • 1 tablespoon lime juice

  • 1 tablespoon simple syrup (equal quatities of sugar and water, dissolve over heat, stick it in a jar and store in the fridge - it will keep for a month)

  • 50ml soda water

  • For garnish: Lemon/lime peel and mint leaves

Step 1: Place the mint leaves in the bottom of a tumbler and lightly mash to release the essential oils

Step 2: Add all the ingredients but the soda water and give it a good stir

Step3: Put in a highball glass with your mint and plenty of ice and top up with soda water

You can of course make this in a cocktail shaker step 1 & step 2 and the ice in the shaker - good shake and then strain into the glass ….
